The gourmet All’Acquacotta restaurant at Terme di Saturnia Spa & Golf Resort, set inside the hotel itself, is also open to non-residents. It’s another option for guests of the resort, who already can rely on the dishes of splendid Mediterranean cuisine and the intense authentic flavours of the Aqualuce restaurant, with its view over the source of the hot spring.
The All’Acquacotta restaurant offers the finest in Tuscan traditional cuisine, with unusual and sophisticated combinations, inspired by the philosophy of “the pleasure of well-being”. An unmistakable culinary style that emphasizes the highest quality primary materials and fresh and natural “zero kilometre” ingredients, from organic and biodynamic sources, such as the Demeter- and IGP-certified extra-virgin La Maliosa Tuscan olive oil. Highlights on the menu include the “duck foie gras torchon with green apple and rhubarb compote”, the “raw catch” with a selection of raw or seared fish, the “pici pasta cowboy-style” with fillet steak and porcini mushrooms. There’s also “risotto creamed with La Maliosa olive oil, lemon and capers with carpaccio of crayfish from the Argentario”, the traditional “Florentine steak”, the “crispy octopus” accompanied by seasonal raw and cooked vegetables. Finally there is “nougat crème brûlée with tangerine sorbet” and “cream of Chieti figs with vanilla ice cream and muscovado roof”.
