TOUR AND TASTE THE MAREMMA
The culinary curious will find Maremma an enormously rewarding region. You’ll discover the nuanced flavours of Tuscan olive oils and myriad recipes for a simple aquacotta soup. Look out for Orbetello Botargo (preserved mullet), the sfratto dei Goym of Pitigliano (a biscuit of Jewish origin), the Maremmana breed of cattle, and Tuscan Sea Palamita (Atlantic Bonito). Of particular importance is the Slow Food Presidia that supports small artisanal producers. Nature and traditions are the source of Maremma’s fine gourmet produce. The highlights are its six DOC wines, including the famous Morellino di Scansano, and selections from Pitigliano, Parrina and Capalbio. Terme di Saturnia bases its cuisine on typical regional produce, favouring organic or biodynamic origin. These include IGP extra-virgin Tuscan olive oil, DOP Tuscan pecorino, honey, Maremman saffron and Sorano beans.
